       Canada is the world's leading producer and exporter to beef.High-quality beef come from advanced cattle breeding,scientific breeding methods,abundant natural environment,and strict government food safety and hygience regulations.The quality of Canadian beef is generally priority to other beef exporting countries,such as the United Stateds and Australia, According to the Canadian beef association,1% of Canadian beef is Prime,46% is AAA,47% is AA,and over 94% of Canadian beef is of high quality.

       China allowed Canadian boneless beef to be imported and exported into the Chinese market in July 2011.Import of boned beef was approved in October 2016.

Canadian Beef Breeds

  在世界上近800个品种的牛被分为两大类,欧洲牛(Bos taurus)和瘤牛(Bos indicus)。欧洲牛祖先来自欧洲北部冷带气候,古代时期就为食肉而选育发展,肉质鲜嫩。而瘤牛的祖先来自于印度热带地区,以耕种为主,肉质相对粗糙,而且质量不稳定。加拿大由于气候寒冷,所有肉牛种群全部来自于欧洲牛种群和其杂交品种,最常见的为利木赞牛,安格斯牛,夏洛莱牛,海福特牛等优质品种,而美国和澳大利亚为干旱热带地区,只能采用瘤牛基因种群的肉牛。这也是加拿大牛肉质量高于其他国家的一个原因。

       Nearly 800 breeds of cattle in the world are divided into two main groups,the Bos Taurus and the Bos indicus.The ancestors of European cattle came from the cold zone climate in northern Europe,in ancient times,meat was selected and developed for meat,and the meat was tender. Zebu cattle,whose ancestors came from the tropics of India,where mainly cultivated,and meat quality was relatively rough and unstable.Due to the cold climate in Canada,all beef cattle populations came from European cattle populations and their hybrid varieties,and the most common are quality breeds such as limousin cattle,Angus cattle,charlottesville cattle and hyford cattle,while the United States and Australia are in the arid tropics and can only use beef cattle of rumen gene populations.This is one reason why Canadian beef is superior to other countries.

  加拿大牛肉质量集分级系统中用的最多就是根据肉牛的生长期、肌肉和脂肪颜色、肌肉种牛脂肪分布的数量和均匀状况综合评定并且被普遍采用的Canada A,Canada AA、Canada AAA、和Canada Prime四个等级。

      The most commonly used quality grading system of Canadian beef is Canada A,Canada AA,Canada AAA,and Canada Prime,Which are comprehensively evaluated according to the growth period of beef cattle,muscle and fat color,number and evenness distribution of muscle beef fat and are generally adopted.

    The Canadian livestock identification system (CLTS) is a retroactive system initiated and established by the industry to control and eradicate animal diseases.Canadian cattle marking agency (CCIA) established in 1998,as an industry-leading non-profit organization dedicated to providing technology and services for the implementation of Canada's national cattle marking program.

     All animal health drugs sold in Canada must be reveiewed and authorized by the federal government before they can be used in cattle production.Through strict control of livestock genetic import,the health of Canadian cattle breeding is guaranteed.The Canadian food inspection agency's (CFIA) department of epidemiology and surveillance is responsible for detecting potential animal diseases and monitoring the effectiveness of control programmes.

  采用玉米、大麦和小麦饲养的牧牛,产出的加拿大牛肉具有良好的油花度、浓郁的肉味、柔嫩的肉质及结实、洁白的脂肪。
